Abstrak
ABSTRACT Fadilah Naing. Analysis of Borax Content in Beef Meatballs in Tondo Village, Palu City (under the supervision of Kiki Sanjaya). Environmental Health Department Public Health Study Program Faculty of Public Health Tadulako University Meatballs are one of the food widely consumed because of its practical serving, affordable price, and widely available in various places, one of which is in Tondo Village, Palu City. The number of people who consume meatballs makes traders compete to make delicious meatballs based on quality and durability, but some traders still use borax as a food additive. Borax (sodium tetraborate) is a chemical substance banned as a food additive. The impact of consuming food containing borax is not immediately apparent on health but will gradually accumulate in the body. Suppose the body is contaminated with large amounts of borax. In that case, it causes poisoning with clinical symptoms of coughing, eye irritation, vomiting, difficulty breathing, toxicity to cells, and accumulation, which can lead to death. The study aims to determine the borax content in meatball samples in Tondo Village, Palu City. Samples were collected from 22 meatball vendors in Tondo Village, Palu City. Borax identification was tested qualitatively using the Turmeric paper method but was not continued to the quantitative test because all samples were negative for borax. The results of laboratory testing using the Turmeric Paper method show that all models examined do not contain borax, so it is not continued at the quantitative testing stage, and it can be concluded that meatballs traded in Tondo Village, Palu City are safe for consumption. Producers are expected to maintain the quality of ingredients used in making meatballs and for further researchers to research other food samples such as rice cake and noodles that potentially contain borax.
