| Abstrak The sub-sector of livestock until now is still one of the activities in implementing development that must be a priority scale, because by making this effort will be able to overcome the shortage of animal protein needs. One of the efforts that must be done, namely developing the type of livestock that is tailored to the potential of the community and its region. Form efforts to develop beef cattle in Central Sulawesi. Beef is one of the food commodities that has contributed to the fulfillment of community nutrition, especially animal protein that is needed in sustaining the development of Indonesia's resources. This study aims to find out the percentage of carcass of bulls and females in Rimah Potong Hewan (RPH) Tavanjuka Village, Tatanga Subdistrict, Palu City. This research has been carried out at the Slaughterhouse (RPH) in Tavanjuka Village, Tatanga Subdistrict, Palu City. The study was conducted 14 days in February 2021. The study used 12 local cattle with male and female sex. The observed variables are Cut Weight, Carcass Weight and Carcass Percentage. The results of the analysis statistically showed that the weight of the carcass weight of the carcass percentage was no different.
