Abstrak
Research on the nutritional value of cereals based on coconut pulp and soy milk waste flour. This study aims to determine the effect of the ratio of the weight of the coconut pulp and soy milk waste flour to the nutritional value of the cereals produced. The ratio of coconut pulp and soy milk pulp flour is 0: 100; 25:75; 50:50; 75:25; and 100: 0 (w / w). The results showed that the highest protein content in cereals was 24.14%, the lowest 0/100 ratio was 14.290/0 ratio, the highest fat content was 34.410/0 ratio and the lowest was 17.79% ratio 100 / 0, the highest carbohydrate is 63.18%, the lowest 0/100 ratio is 25.6%, the ratio 100/0, the highest fiber is 6.93% at the 0/100 ratio and the highest ash content is 0.12% at the 0/100 ratio; the lowest 0.03% ratio of 100/0 and the lowest moisture content of 0.92% at the ratio of 100/0. The lowest 0.92 ratio is 0/100. The cereals produced meet the nutritional content standards according to SNI 01-4270-1996.
