Abstrak
Research has been carried out on the retention of carotene processed by pumpkin sticks (curcubita moschata) through storage at room temperature. This study aims to determine the carotene retention of pumpkin sticks and determine the shelf life of pumpkin sticks at room temperature storage. This research was repeated 3 times. The results showed that the highest carotene retention in pumpkin sticks at week 0 was 1% and the shelf life of pumpkin sticks following the 1st order reaction with a shelf life of 9,3 weeks.
