Abstrak Moringa (Moringa oleifera L.) is one type of tropical plant that is easy to grow in Indonesia. Consuming Moringa leaves regularly is very good for health for our bodies.The utilization of Moringa leaves is the processing of Moringa leaves into the form of Moringa leaf tea and Moringa leaf flour or powder which can be used as a fortification material to provide nutrients for various food products, such as pudding, cake, nuggets, biscuits, crackers and nutritional supplements (Aminah dkk, 2015). The Moringa Ice Cream business of Tabassam SMEs is a business that is still running for 5 years and is in the process of being pioneered, which of course requires research to develop its business. This study aims to determine the added value of the Moringa ice cream processing business in Tabassam SME, Palu City.The research location was chosen purposively with the consideration that Tabassam SMEs are the only SMEs that produce Moringa leaf processing into Moringa Ice Cream in the city of Palu. Data retrieval of research respondents were leaders and employees of Moringa ice cream business with the consideration that respondents were very competent to provide information in connection with this research activity and the analytical tool used in this study was the value added analysis of the Tarigan method. The results showed that the income earned by Tabassam SMEs in April 2021 was Rp. 1,514,036.48. The added value of processing Moringa leaves into Moringa ice cream obtained by Tabassam SMEs is Rp. 521,917/kg of fresh Moringa leaves used, and at the same time it is an advantage obtained in 1 kg of Moringa leaf raw materials.
