Abstrak ABSTRACT Carrots (Daucus carota L.) are shrub-shaped millennial root vegetable crops. Consumption of carrots can lower cholesterol and improve digestion. The abundant carrot production in Central Sulawesi is not supported by people's consumption patterns to consume lots of vegetables, especially carrot vegetables which are rich in vitamins. One of the things that can be done to increase the level of vegetable consumption is to modify these vegetables, especially carrots, into foods that are more durable and preferred by most people. By seeing this opportunity, Carrot Ice Cream Business processes carrot vegetables into ice cream. This study aims to determine the financial feasibility of the carrot ice cream business. The location of the study was chosen deliberately (Purposive) with the consideration that this business is one of the carrot ice cream processing businesses in Palu City. The results of the financial feasibility analysis using an investment of Rp. 14,130,500 obtained a Net Present Value (NVP) of Rp. 5,536,875, an Internal Rate of Return (IRR) of 35.77% and a Payback Period (PP) of 1 year and 5 months. This means that within that period of time the investment costs incurred can be returned, the industry is feasible because the return period of investment is less than the economic life of 3 years.
