Abstrak ABSTRAK Plastik biodegradable adalah bioplastik yang terbuat dari bahan pati yang mudah terdegradasi oleh alam secara alamiah. Modifikasi pati ikatan silang (cross linking) yang dilakukan menggunakan sodium tripolyphosphat (STPP) memiliki sifat yang dapat bereaksi dengan pati. Penelitian ini bertujuan untuk mendapatkan bioplastik dari pati aren fosfat terbaik berdasarkan karakteristik fisikokimia dan sensoris nya. Penelitian ini dilaksanakan di Laboratorium Agroindustri, Program studi Agroteknologi, Fakultas Pertania Universitas Tadulako Palu. Menggunakan Rancangan Acak Lengkap (RAL) dan Rancangan Acak Kelompok (RAK) pada perlakuan konsentrasi pati aren fosfat terdiri dari 9 taraf yaitu 6,0%, 6,5%, 7,0%, 7,5%, 8,0%, 8,5% 9,0%, 9,5?n 10,0?ngan 3 kali ulangan sehingga diperoleh 27 unit percobaan. Parameter penelitian ini terdiri atas ketebalan, daya serap air, daya serap minyak, water vapor transmission rate (WVTR), kelarutan, biodegradasi dan sesoris. Hasil penelitian menujukkan bahwa konsentrasi pati aren fosfat yang memberikan karakteristik terbaik adalah 7,5%. Ketebalan, daya serap air, daya serap minyak, daya mengembang dan kelarutan meningkat dengan bertambahnya konsentrasi pati aren fosfat. WVTR bioplastik stabil seiring dengan bertambahnya konsentrasi pati aren fosfat, waktu degradasi sempurna bioplastik adalah 9 hari pada konsentrasi 6,0%, 6,5?n 8,0%. Adapun sifat sensoris kejernihan, tekstur, aroma dan tingkat kesukaan cenderung meningkat dengan bertambahnya konsentrasi pati aren fosfat. ABSTRACT Biodegradable plastic is bioplastic made from starch which is easily degraded naturally by nature. Modification of cross-linked starch which is carried out using sodium tripolyphosphate (STPP) has properties that can react with starch. This research aims to obtain the best bioplastic from phosphate palm starch based on its physicochemical and sensory characteristics. This research was carried out at the Agro-Industry Laboratory, Agrotechnology Study Program, Faculty of Agriculture, Tadulako University, Palu. Using a Completely Randomized Design (RAL) and Randomized Block Design (RAK) in the concentration treatment of palm phosphate starch consisting of 9 levels, namely 6.0%, 6.5%, 7.0%, 7.5%, 8.0%, 8.5% 9.0%, 9.5% and 10.0% with 3 repetitions to obtain 27 experimental units. The parameters of this research consist of thickness, water absorption capacity, oil absorption capacity, water vapor transmission rate (WVTR), solubility, biodegradation and accessories. The results of the research show that the concentration of palm phosphate starch that provides the best characteristics is 7.5%. Thickness, water absorption capacity, oil absorption capacity, swelling capacity and solubility increased with increasing palm phosphate starch concentration. The WVTR of bioplastics is stable as the concentration of phosphate palm starch increases, the complete degradation time for bioplastics is 9 days at concentrations of 6.0%, 6.5% and 8.0%. The sensory properties of clarity, texture, aroma and level of liking tend to increase with increasing concentration of palm phosphate starch. |
