Abstrak
This study aims to (a) get the best coconut fiber / coconut oil absorbent ratio that can improve the physicochemical quality of traditional ratio coconut oil and (b) get the best coconut fiber / coconut oil absorbent ratio that can improve the organoleptic quality of traditional ratio coconut oil. This study uses a Completely Randomized Design (CRD) used to determine the effect of treatment on the parameters of oil recovery, water content, free fatty acid levels and the degree of clarity and Randomized Block Design (RBD) is used to determine the effect of treatment on the parameters of sensory properties (color, aroma, taste and likeness). As a treatment is absorbent coconut coir which consists of 6 levels namely 0, 2.5, 5, 7.5, 10 and 12.5 g / 100 ml of oil. All treatments were repeated 3 times to obtain 18 experimental units. The results showed that (a) the best absorbent ratio of coconut coir / coconut oil (10 g / 100 ml) improved the physicochemical quality of traditional coconut oil (degree of clarity, moisture content and free fatty acids) and (b) the ratio of absorbent coconut coir / oil coconut (10 g / 100 ml) best improves the physicochemical quality of traditional coconut oil ratios (color, aroma, taste and liking).
