Abstrak The objective of the study is to obtain the highest yield of pectin and the best quality of pectin extracted using various concentrations of hydrochloric acid solution. This research was compiled using a completely randomized design (CRD) of one factor consisting of five levels of treatment with the concentration of Hydrochloric Acid (HCl) with the following details: 1 N; 1.5 N; 2 N; 2.5 N and 3 N were repeated 3 times to obtain 15 experimental units. Treatments that have a real or very real effect are further tested with the Honestly Significant Difference test (BNJ) between 5% or 1%. The results showed that the administration of 3N HCl Concentration was the best concentration which gave the highest yield of pectin 15.30%, and gave the best chemical quality of pectin at various concentrations of HCl solution, specifically the 9.63% methoxyl content, galacturonic acid content 240.65% , pectin clarity 16.73%, and esterification degree 23.44%. |
