Alpukat (Persea americana Mill) adalah buah yang berasal dari Meksiko dan Amerika Tengah. Memiliki ciri-ciri daging buah berwarna hijau di bagian bawah kulit dan menguning ke arah biji dengan tekstur agak lunak saat sudah matang. Warna kulit bervariasi, ada yang hijau karena kandungan klorofil. Penelitian ini bertujuan untuk mengetahui kadar flavonoid total pada kulit buah alpukat mentega. Penentuan kadar flavonoid total menggunakan spektrofotometer UV-Vis, Ekstraksi dilakukan dengan menggunakan metode meserasi dengan pelarut etanol 96%. Hasil penelitian menunjukkan Analisis kadar flavonoid total pada panjang gelombang 431 nm didapatkan hasil ekstrak alpukat mentega (1) yaitu 22,75 mg/L, ekstrak alpukat mentega (2) yaitu 21,25 mg/L, ekstrak alpukat mentega (3) yaitu 47 mg/L. Hasil penelitian ini diharapkan mampu menarik minat masyarakat untuk membudidayakan tanaman alpukat mentega. khususnya di daerah sulawesi tengah kecamatan palolo kabupaten sigi desa tongoa. Avocado (Persea americana Mill) is a fruit that comes from Mexico and Central America. It has the characteristics of green flesh at the bottom of the skin and yellow towards the seeds with a slightly soft texture when it is ripe. Skin color varies, some are green because of the chlorophyll content. This study aims to determine the levels of total flavonoids in butter avocado rind. Determination of total flavonoid content using a UV-Vis spectrophotometer. Extraction was carried out using the meseration method with 96% ethanol solvent. The results showed that analysis of total flavonoid content at a wavelength of 431 nm showed that avocado butter extract (1) was 22.75 mg/L, avocado butter extract (2) was 21.25 mg/L, avocado butter extract (3) was 47 mg/L. The results of this study are expected to be able to attract public interest in cultivating butter avocado plants. especially in the area of Central Sulawesi, Palolo sub-district, Sigi district, Tongoa village.
