Abstrak This study aims to determine the antioxidant activity of pure ?-carrageenan and degraded ?-carrageenan. K-carrageenan is hydrolyzed under acidic conditions using hydrochloric acid. The result is ?-carrageenan with a molecular weight above 3500 Da and ?-carrageenan with a molecular weight below 3500 Da. The method for determining antioxidant activity is to use DPPH. FTIR and GC-MS analysis were used to determine the characteristics of the antioxidant compounds in the sample. FTIR analysis results showed the presence of O-H, C-O, C-H, C=C, C-N, NO2, and aromatic rings. GC-MS analysis results showed the presence of compounds such as Hexadecanoic acid; ethyl ester; 1,2-Benzenedicarboxylic acid; 9,19-Cyclolanostan-3-ol, 24-methylene-, (3beta); and 2,6,10,14, 18,22-Tetracosahexaene, 2,6,10,15,19,23-hexamethyl-, (all-E) which have potential as antioxidants. Sample had the highest percent inhibition at concentration 800 ppm, namely, pure ?-carrageenan, 13.58%, ?-carrageenan BM> 3500 Da 42.28%, and ?-carrageenan BM <3500 Da 34.99%. |
