Melinjo (Gnetum gnemon L.) is one of the plants found in Central Sulawesi, especially in the Palu city area. This plant has many benefits ranging from stems, leaves, flowers and seeds with nutritional content ranging from carbohydrates, proteins, fats, and vitamins. Young melinjo leaves are one of the parts of the melinjo plant that are most often used by the community as vegetables that have nutrients, one of which is vitamin C, Besides that, melinjo leaves also contain antioxidant compounds such as lycopene and carotenoids. Besides being used as a young melinjo leaf vegetable, it can also be processed into a melinjo leaf cracker product that can be consumed by both adults and children. This study aims to determine the levels of vitamin C in melinjo leaf crackers. Determination of vitamin C levels using the Uv-Vis Spectrophotometry method. The results of this study showed that the percentage of vitamin C levels of melinjo leaf crackers in each repetition (P1, P2, P3) was 37.66% mg/100g, 37.89% mg/100g, 37.90% mg/100g with an average 37.81% mg/100g. The results of this study were declared very feasible to be used as a learning resource in the form of a practicum guide with an average feasibility percentage of 82.53%.
